Summer is finally here- and you know what that means: backyard cookouts, hosting family and friends, and enjoying the long summer nights. Sometimes, it can be hard to know what to make or how to please your guests. Don't worry, we've got you covered with some fun summer recipes you can find below!
Star Spangled Mule:
Fourth of July may be over, but the this delicious drink will still keep you hydrated and patriotic all summer long!
4oz Ginger Beer
1/2oz Lime Juice
Sprig of mint
-In a Moscow Mule Glass, add berries and lime juice. Lightly mash with a muddler. Top with vodka and ginger beer, stir to combine, and serve with mint!
Cilantro Lime Grilled Chicken Tacos:
This meal can even be prepared over a campfire!
-Cilantro Lime Marinade:
4 boneless skinless chicken thighs, about 1 lb
2 tablespoons chopped cilantro
2 limes, juice + zest
1 teaspoon salt
1 teaspoon chili powder
1 teaspoon cumin
½ teaspoon garlic powder
½ teaspoon ground coriander
1 tablespoon oil
pico de gallo
- Prepare the marinade: Mix the oil, lime juice + zest, cilantro, and spices together in a small bowl (this can be done at home). Place the chicken into a tupperware or sealable bag and pour the marinade over, shaking to ensure that the chicken is coated evenly. Marinate for at least 30 minutes (an hour is better), or up to two hours. Prepare a grill or campfire for grilling. Remove the chicken from the marinade and place it on the grill. Cook until the internal temperature reaches 165F, turning as needed to ensure even cooking (approx 5-8 minutes on each side). Remove from the heat and chop into bite-sized pieces. To assemble the tacos, layer chicken, pico de gallo, cheese, and fresh cilantro into tortillas (warmed over the grill if you’d prefer!) and enjoy.
Orange Lemon-Lime Mintade:
No alcohol? No problem! This fun summer drink will satisfy the whole family!
2 cups cold water
2 cups fresh orange juice
3/4 cup fresh pink grapefruit juice
1/2 cup fresh lime juice
1/4 cup fresh lemon juice
1 cup loosely packed fresh mint leaves, torn
1/4 to 1/2 cup sugar, to taste
- Stir together water, juices, mint, and sugar in a large pitcher until sugar is dissolved. Chill until cold, at least 1 hour. Adjust sugar to taste and serve over ice.
Strawberry Pretzel Dessert Bars:
Finish off your perfect summer cookout with this yummy and easy dessert!
-No-Bake Cheesecake Layer:
6 cups sliced fresh strawberries (or 2 - 14 ounce packages frozen unsweetened strawberry slices, defrosted and drained)
Preheat oven to 350 degrees F. In a large bowl mix together the pretzels, melted butter, and 3 tablespoons granulated sugar. Press firmly into bottom of an ungreased 13x9-inch baking dish into an even layer all the way to edges. Bake the pretzel crust at 350 degrees F for 10 minutes. Remove from oven and cool crust completely. In a large mixing bowl beat together cream cheese, 3/4 cup granulated sugar, and vanilla extract with electric mixer until smooth and creamy. Fold in defrosted whipped topping with a rubber spatula. Spread mixture evenly over cooled pretzel crust to edges. Put in refrigerator for about an hour or until chilled. Place strawberry gelatin in large mixing bowl. Pour boiling water over gelatin and whisk until gelatin is dissolved. Stir in orange zest if desired. Cool slightly then mix in sliced strawberries. Pour over cream cheese layer and spread for even layer. Refrigerate at least 4-5 hours or until gelatin is set.
